由细胞产生的具有催化能力的蛋白质。是具有高度特异性的高效生物催化剂。对于生物体来说，新陈代谢是生命活动最重要的特征，而酶是调节一切代谢反应的物质，酶缺陷或者酶失活有可能使代谢停止，生命也会因此而结束。按照分子中起催化作用主要成分的不同，酶可以分为蛋白质类酶和核酸类酶两大类。
